Pilot record-processing workflow

The current synthetic/de-identified pilot now supports source IDs, record categories, date ranges, an in-workspace chart viewer, structured clinical-data entry, RN verification, and traditional report export. Automated OCR and AI extraction remain intentionally disabled until a reviewed model connection and production security controls are configured.
